MANGO SMOOTHIE...or is it a pudding?

This is my shout out and deep thanks to the Lord first, and to the farmers of Hope Eco Farms, in Aylmer Ontario, for doing what they do. And to the guys and gals at The Healthy Butcher for bringing Hope Eco products here to Toronto.  Thank you so much for making this healthy smoothie a breakfast option for me. But more about this later.

This mango smoothie came out so thick, I decided it needed a spoon and a sprinkling of cinnamon.  Wow! It was absolutely delicious!

Ingredients:
1/2 cup Buffalo-kefir (more on this below) including the chunks
1 cup chopped frozen mango
1/2 cup coconut water (I use Grace 100% pure)
1 tbls Raw organic honey
1 tbls organic flax seeds
Ground cinnamon to taste

Instructions:
Using a high powered blender (Vitamix) add all of the ingredients, except the cinnamon, to the blender jar in the order listed.  Blend on high for two -three minutes, or until the flax seeds are well ground and the mixture is warm, or cool if you don't have a sensitive stomach.  If you added enough of the kefir grains the mixture should be pudding like.  Pour the mix into a glass, parfait cup, or any other fancy cup you wish, sprinkle it with cinnamon and consume immediately.  You don't want to waste any of the goodness from the ground flax.  Now about that Buffalo-kefir...

I recently did the over 200 food sensitivity test.  Mostly I learned what I already knew, that I was severely intolerant to anything that comes from a cow, but also sheep and goats, even their by-products, and modified milk ingredients.

I laughed when I read that I was fine with Buffalo milk.  Buffalo milk?  Really?!  I joked and asked if anyone knew where I could go to milk a buffalo.  Apparently I don't have to.  The guys and gals at Hope Artisan Dairy Coop have already looked after that.  And The Healthy Butcher has brought their product to Toronto. 

While they no longer carry the milk, which on my current program I can't have anyways, to my delight they do carry Buffalo-kefir and Buffalo yogurt, which I have yet to dry.  The young lady who helped me raved about the kefir and while I tried it yesterday with some trepidation, today was a whole other story.  She was absolutely right and I couldn't wait to dig in.
