Ingredients:
1 medium head of cauliflower
1/4 cup of 'Melt' or butter
1/2 cup of Coconut Milk
Sea salt & freshly ground pepper to taste.
Method:
Rinse cauliflower and add to medium size pot. Fill pot with enough water to cover and bring to a boil over medium/high heat. Boil 7- 10 minutes until cauliflower is fork tender. Strain the cauliflower using a colander and place back into the pot. Add the Melt and Coconut Dream and mash until smooth and creamy, but not to thin. Add more Melt and coconut milk if necessary. Serve topped with Slumgullion, Dairy Free Cheese Sauce, or Creamy Onion Sauce, or serve it plain with butter (or Melt for a dairy free option).
