
This is a favorite old Irish dish and an easy week-night meal to put together. I just had to keto-fy it by removing the starchy white potatoes and the sugary-Worcestershire sauce. This is an excellent meal to warm up with on a cold night.
Slumgullion:
Ingredients:
1 1/2 pounds of ground lamb or beef, if using regular drain the fat
1 large onion, peeled, finely chopped - or 6 green onions - stems only for FODMAP restrictions
4 carrots, peeled, chopped
1 large stalk of celery, chopped, or 1/2 tsp of celery salt
Chicken bone broth to cover (In a pinch I use Imagine Chicken Bone Broth)
1 tablespoon each basil, marjoram, or oregano according to your taste
1 - 2 bay leaves
Salt and Pepper to taste
Method:
Brown the meat in a large skillet over moderate heat, greased if necessary. Once the meat is browned stir in the remaining ingredients and bring to a boil. Reduce the heat to low, cover, and simmer over low heat for 1 hour. (Mixture can also be poured into a greased crock pot liner and cooked on low for 3-4 hours.) Stir occasionally to break up the mixture. Vegetables should be tender when done. Serve Slumgullion over Cauliflower Mash. Makes 4 to 5 servings.
